1 cup sugar
1 cup melted butter,
2 cups grated uncooked sweet potatoes
1/2 cup half-and-half
1 tsp ginger
Grated rind of 1 orange
Preheat oven to 350. Stir together sugar and butter. Add remaining ingredients and pour into a greased 1-quart casserole. Bake until firm and golden brown. Serves 4
