HAITIAN FRENCH TOAST

1 cup orange juice
1/3 cup whipping cream
2 eggs
1 tsp ground cinnamon
1/8 tsp grated nutmeg
1/4 cup sugar
1 lb loaf stale French bread, cut into 1 1/2 inch slices
1/2 cup unsalted butter
Confectioners sugar
Maple syrup
Whisk together first 6 ingredients in a large bowl. Place bread slices, a few at a time, in the mixture until they are wet, but not soaked and mushy. Heat oven to 250.
Heat 4 tbsp butter in a skillet until foamy and saute bread on both sides until golden brown. Add more butter as needed. Remove slices to a plaster and dust with confectioners sugar; keep warm in oven until all bread is sauteed. Dust once more with sugar and serve with syrup. Serves 4
