CHICKEN CAESAR SALAD

2 boneless, skinless chicken breasts, cut into strips
1/2 cup lemon juice
2-4 clove garlic, crushed and minced
1/2 tsp salt
1/4 tsp pepper
1 tbsp parsley, finely minced

Dressing
1 1/2 cups mayonnaise
1/3 cup olive oil
1 tsp red wine vinegar and balsamic vinegar
5-8 clove garlic, finely crushed
1 - 2 tbsp lemon juice, start with 1 tbsp
Salt and pepper
1 tsp Dijon mustard
1 tbsp Worcestershire sauce
1/4 tsp hot sauce
1/2 cup freshly grated parmesan cheese

6-8 cups romaine lettuce, cut into bite-sized pieces
Garlic croutons, additional grated cheese and thin lemon slices

Marinate chicken in a bowl with next 5 ingredients, mixing to combine and coat chicken. Refrigerate at least 30 minutes. Grill or stir-fry chicken to cook and char it slightly. Keep warm.

Dressing: Whisk together dressing ingredients. Place half the dressing in the bottom of a very large bowl. Toss with the greens. Divide on 4 plates. Top with equal portions of grilled chicken, croutons and slivers of lemons. Sprinkle with additional cheese. Add more dressing if desired or refrigerate up to 7 days. Serves 4
