SOUR CREAM BLUEBERRY QUICK BREAD

4 cups sifted flour
2 tsp baking soda
1 tsp salt
1/2 lb butter (soft)
2 cups sugar
4 eggs
2 cups mashed banana
1 cup sour cream
2 cups blueberries (fresh or frozen)
1 cup chopped walnuts

Preheat oven to 350. In a large bowl sift together flour, baking soda and salt. Set aside.

Cream butter and sugar until creamy and fluffy. Add in the eggs one at a time. Be sure to blend each egg before adding the next. Add in the banana and sour cream and blend together. Switching to a spoon or spatula slowly add the flour mixture. Combine till moistened. Fold in the blueberries. Pour batter into 2 greased loaf pans. Bake for 60 minutes. Check bread with a cake tester. Cool for 15 minutes then remove from pan. Makes 2 loaves
