PEPPERCORN QUICK BREAD

1 cup melted butter
3/4 cup buttermilk
1 1/2 cups cream corn
1 cup cornmeal
1 large onion
2 eggs, beaten
1/2 tsp baking soda
1 1/2 cups cheddar cheese, grated
3 hot peppers, chopped
Preheat oven to 350. In a mixing bowl, combine the butter, buttermilk, corn, cornmeal, onions, eggs and baking soda until well blended. Pour half the mixture into a greased 9 inch square pan. Sprinkle half the cheese, all the peppers, then the remaining cheese. Pour the remaining batter on top. Bake for 50 minutes. Serve warm. Makes 1 loaf
