PEACH PECAN QUICK BREAD

1 (16 oz) can sliced peaches
6 tbsp butter, melted
2 eggs
1 tbsp lemon juice
2 cups all-purpose flour
3/4 cup sugar
3 tsp baking powder
1 tsp salt
3/4 cup chopped pecans
2 tbsp peach preserves

Preheat oven to 350. Place a collinder over a bowl and drain the juice from the can of peaches. Keep 1/4 of a cup of the syrup from the canned peaches. Dice finely enough peaches to make 1 cup; set aside.

In a blender add the remaining peaches, butter, eggs, the 1/4 cup of syrup and lemon juice. Blend until smooth. Place mixture in a large bowl and add flour, sugar, baking powder, salt. Mix slightly, just until mixed. Fold in diced peaches and chopped nuts. Pour batter into a greased loaf pan. Bake for about 1 hour. Cool in pan for 10 minutes. Then remove and cool on a wire rack.
