LEMON LOAF QUICK BREAD

1 1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 cup shortening
1 1/4 cup sugar
2 eggs
2 tbsp grated lemon rind
1/2 cup milk
Lemon juice from a whole lemon

Preheat oven to 350. Combine flour, baking powder and salt. Cream shortening. Beat in 1 cup of sugar gradually. Add eggs 1 at a time, mixing well between each egg. Add dry ingredients alternately with milk. Be sure to mix well. Pour mixture into a greased loaf pan. Bake for 50-60 minutes. Remove loaf and let cool.

In a small bowl, mix lemon juice and 1/4 cup of sugar. After loaf is cooled for 10 min. pour lemon glaze over loaf and spread. Remove from pan. Makes 1 loaf
