APRICOT QUICK BREAD

2 cup flour
1 cup sugar
1 cup chopped dried apricots
1/2 cup chopped walnuts
1 tbsp baking powder
1 tsp salt
2 eggs (beaten)
1 cup milk
1/4 cup vegetable oil
Preheat oven to 350. Combine flour, sugar, apricots, nuts, baking powder and salt. Set aside. In another bowl combine eggs, milk and oil. Add liquid to the dry ingredients. Just till blended. Pour mixture into a greased baking pan. Bake for 50-60 minute. Remove let cool for 10 min. Remove from pan. Continue to cool on wire rack. Makes 1 loaf
