Quiche with Crab and Green Onions

2 tablespoons minced green onions
3 tablespoons butter
¼ pound (about 1 cup) cooked fresh or canned crab
¼ teaspoon salt
Pinch of pepper
2 tablespoons Madeira or dry white vermouth
3 eggs
1 cup whipping cream
1 tablespoon tomato paste
¼ teaspoon salt
Pinch of pepper
¼ cup grated Swiss cheese
Partially cooked 8-inch pastry shell placed on a baking sheet

Preheat oven to 375 degrees.
Cook green onions in butter 1 to 2 minutes over medium heat until tender but not browned. Add crabmeat and stir gently 2 minutes. Sprinkle with salt and pepper. Add wine or vermouth, raise heat and boil a moment. Cool slightly.

In a bowl, beat eggs with the cream, tomato paste and seasonings. Gradually blend in shellfish mixture. Pour mixture into pastry shell and sprinkle with Swiss cheese.
Set in upper third of preheated oven and bake 25 to 30 minutes, or until quiche has puffed and browned. Remove from oven and serve.
