SAUSAGE AND BROCCOLI BAKE

1/2 lbs bulk pork sausage
1 small onion, chopped
1 1/2 cups fresh broccoli florets, steamed
3 cups shredded cheddar cheese, divided
3 eggs, beaten
1 1/4 cups milk
1/2 cup baking mix

Preheat oven to 350. Grease a 9-inch deep-dish pie plate.

In a skillet cook the pork sausage meat with onion until browned; drain fat. Sprinkle the cooked sausage on the bottom of the pie plate then top with2 cups shredded cheddar then broccoli on top of the cheese.

In a bowl combine the eggs with milk until well combined then mix in the baking mix until blended; pour over the broccoli. Place the pie plate onto a baking sheet to catch any spills. Bake for about 25-30 minutes or until a knife inserted in the middle comes out clean. Sprinkle the top with remaining 1 cup cheddar cheese and allow to melt.
