AMISH APPLE CAKE WITH HOT CARAMEL SAUCE

1/2 cup chopped pecans
2 1/2 cups finely chopped apples
1/2 cup butter, softened
1 cup sugar
1 egg
1 tsp baking soda and cinnamon
1/4 tsp salt
1/2 tsp nutmeg
1/2 tsp vanilla extract
1 cup flour

Hot Caramel Sauce
1/2 cup butter
1 cup packed brown sugar
1/2 tsp salt
1 tsp vanilla extract
1/2 cup evaporated milk

Preheat oven to 350. In a bowl, cream butter and add sugar. Beat until fluffy. Add egg and beat until well blended. Mix dry ingredients and add to creamed mixture just until blended. Stir in apples and nuts. Pour into an oiled 9 inch baking pan and bake for 30 minutes or until toothpick inserted into center comes out clean. Serves with Hot Caramel Sauce.

Hot Caramel Sauce: In a saucepan, combine first 3 ingredients and bring to a boil. Remove from heat and whisk in vanilla extract and milk. Serve warm sauce over cake.
