SWEET POTATO CAKE

2 1/2 cups flour
2 tsp baking soda and baking power
1/4 tsp salt
2 tsp cinnamon and nutmeg
1 cup packed brown sugar and sugar
1 1/2 cups butter
3 eggs
1 tsp vanilla extract
2 1/2 cups mashed sweet potatoes
1/2 cup crushed pineapple, drained
1 cup raisins and chopped walnuts
Cream Cheese Icing
2 (8 oz) pkg cream cheese, room temperature
1/3 cup butter, softened
1 tbsp vanilla extract
3 cups confectioners sugar
Preheat oven to 350. Grease 2 (9 inch) cake pan or 3 (8 inch) cake pans. In a large bowl, stir together dry ingredients. Add 1 egg, butter and vanilla extract and blend on low speed. Increase speed to medium and beat for 2 minutes, scraping down sides of bowl and add remaining eggs, one at a time, beating after each addition. Add remaining ingredients and blend on low until thoroughly mixed. Pour into prepared pans and smooth the surface with a spatula. Bake for 60-70 minutes or until toothpick inserted into center comes out clean. Allow to cool in pans about 10 minutes before inverting to a wire rack to cool completely.
Icing: Beat cream cheese and butter until smooth. Add vanilla extract and mix well. Gradually beat in sugar until smooth and spread on cake.
