*SWEET AND SOUR PORK*

3 tbsp butter
1 egg
2 tbsp water
1 1/2 lbs cubed pork
1 cup baking mix

Sweet and Sour Sauce
1/3 cup packed brown sugar
3 tbsp cornstarch
1 (20 oz) can pineapple chunks, drained, reserve syrup
3 tbsp vinegar
2 tbsp ketchup and soy sauce
1 green or red bell pepper, cut into 1 inch pieces
1 small onion, sliced

Hot, cooked rice

Preheat oven to 400. Heat butt in a 13x9 inch baking pan, in oven until melted. Beat egg and water slightly. Dip pork cubes in egg mixture and then in baking mix. Arrange pork in pan and bake for 35 minutes, turn; bake an additional 15 minutes.

Prepare sauce: Mix brown sugar and cornstarch in a skillet. Add enough water to reserved pineapple syrup to measure 2 1/4 cups liquid. Mix together with next 3 ingredients and cook over medium heat, stirring constantly, until mixture thickens and boils. Stir in remaining ingredients. Cover and simmer 5 minutes or until vegetables are softened slightly.

Stir cook pork into sauce and heat through. Serve over rice.
