ITALIAN SKILLET DINNER

4 oz vermicelli, brocken in half and cooked al dente, drained, reserving 1/2 cup pasta water
1 tbsp olive oil
16 oz boneless, skinless chicken breasts, cut into bite size pieces
4 oz sliced mushrooms
1 cup chopped green and red bell pepper
1 tsp dried basil
1/2 tsp dried oregano
1 cup chopped cherry tomatoes
1 tsp salt
1/4 tsp pepper
1/2 cup reserved pasta
4 tsp olive oil

While pasta is cooking, heat oil in skillet and cook chicken, about 4 minutes, until no longer pink. Place on a plate; set aside. Add vegetables and seasonings to skillet and cook for 4 minutes or until onions are translucent, stirring. Add tomatoes, cooked pasta, pasta water, chicken and any juices that accumulate, and salt and pepper. Stir iand cook for 1 minut, remove from heat and add oil and serve. Serves 4
