TEXAS WINGS

Sauce
1 cup apple juice
1/3 cup lime juice
3/4 cup hot pepper sauce
1 tsp Worcestershire sauce, celery seed and white pepper
1/2 tsp Tabasco sauce
1 tsp water mixed with 1 tsp cornstarch

Chicken
20 chicken drummettes
2 cups flour
2 tsp salt and pepper
1 tsp paprika

Sauce: Combine first 7 ingredients in a saucepan and bring to a bowl. Stir in cornstarch slurry and cook about 5 minutes, stirring constantly. Set aside and keep warm.

Chicken: Combine flour and seasonings and dust the chicken. Deep fry until golden brown, and place cooked drummettes in a bowl. Ladel sauce over them and toss to coat. Remove chicken from sauce and serve with ranch dressing.
