APPLE BRANDY CAKE

2 cups flour
1 1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
1 1/4 cups vegetable oil
2 cups sugar
2 eggs
2-1/2 cups apples, peeled and chopped
1 cup chopped nuts
1 tsp vanilla
1/3 cup brandy

Sift together flour, salt, nutmeg, cinnamon, and baking soda. In a separate bowl, mix together the vegetable oil, sugar, and eggs. Combine both bowls and mix until most. In a third bowl, mix together the apples, nuts, vanilla, and Brandy and add to batter. Pour into a greased 9 x 13-inch glass pan. Bake at 350 for 45 minutes. Cool on rack and cover with plastic wrap. Let sit for 2 days before serving.
