FRIED CHICKEN LIVERS

1 lb chicken livers
Frying oil
1 egg, beaten
1/2 cup milk
1 cup flour
1 tsp salt and pepper

Heat 2 inch of oil in a skillet to 325 degrees. Prepare breading station: beat the egg and milk in one bowl, combine flour and seasonings in another dish. Dip livers in egg mixture and then in flour mixture. Set aside on a rack until all livers are breaded. Cook in hot oil very slowly and carefully. Cover the skillet, and after 4 minutes, turn and cover again. Cook another 4 minutes. Drain on paper towel lined platter. If desired, serve with cream gravy.
