MINIATURE APPLE CHEESECAKES

8 vanilla wafer cookies
1 tbsp butter
1 cup chopped, peeled sweet apples
6 tbsp sugar, divided
1/2 tsp ground cinnamon
1 (8 oz) pkg cream cheese, room temperature
1 egg
1/3 cup sour cream
1 tsp vanilla extract

Preheat oven to 325. Place paper liners in 8 muffin cups. Place cookie in bottom of each; set aside.

In a small skillet, melt butter. Add apples; cook and stir until tender, about 5 minutes. Sprinkle with 1 tbsp sugar and cinnamon; spoon over cookies.

Beat sugar and remaining ingredients until smooth. Spoon over apples. Bake until set, about 25-28 minutes. Cool on a rack; remove cakes. Cover and refrigerate until cold, about 2 hours. Garnish with sour cream, apple slices and crushed vanilla wafers, if desired.
