TACO CASSEROLE

1 lb ground beef
1 cup chopped onion
2 clove garlic, minced
1 cup water
1/2 cup taco sauce
1 (4 oz) can diced green chili pepper, drained
1 (2.25 oz) can sliced black olives, drained and divided
1 (1.23 oz) packet dry taco seasoning mix
1 (12 count) package taco shells or white corn taco shells, broken into pieces and divided
1 (8 oz) pkg shredded sharp cheddar or Mexican-blend cheese, divided
Chopped tomatoes and sliced green onions, garnish

Preheat oven to 375. In a large skillet, saute first 3 ingredients; drain. Stir in ext 4 ingredients, along with 1/4 cup olives an taco seasoning mix. Reduce heat to low and simmer 3-5 minutes.

Layer half of broken taco shells in bottom of a lightly greased 13x9 inch baking pan. Cover with half of meat mixture and 1 cups cheese. Repeat layering. Bake at 375 for 20-25 minutes, or until cheese is melted and bubbly. Top with remaining olives, tomatoes and green onions. Serves 8
