STRAWBERRY CHICKEN AND CASHEW SALAD WITH HONEY BALSAMIC VINAIGRETTE

4 cups romaine lettuce
4 cups spring mix
2 cups strawberries, quartered
1/3 cup red onion, sliced
12 oz skinless, boneless rotisserie chicken breast, sliced
2 tbsp unsalted cashews, halved
1/2 cup feta or blue cheese, crumbled

Honey Balsamic Vinaigrette:
1 tsp honey
1tbsp balsamic vinegar
2tbsp extra virgin olive oil
Salt and freshly ground pepper, to taste

To prepare dressing, combine honey and vinegar in a small bowl. Gradually drizzle in oil, stirring constantly with a whisk (this can be done in a food processor). Season to taste with salt and pepper.

To prepare salad, combine romaine and next 4 ingredients (through chicken) in a bowl; toss gently. Place about 2 cups chicken mixture on each of 4 plates. Top each serving with 1 1/2 tsp cashews and 2 tbsp cheese. Drizzle dressing over each serving.

Serves 4.
