2 potatoes, thinly sliced
1 onion, thinly sliced
2 tbsp unsalted butter
4 eggs, lightly beaten
1/2 cup light cream
1/2 cup grated gruyere cheese
3 tbsp Dijon mustard
Salt and pepper, to taste
1 partially baked 9 inch pie shell

Preheat oven to 375. In a skillet, saute potatoes and onions in butter until cooked and lightly browned, about 18-20 minutes. Cool slightly.

Mix remaining ingredients. Place the potatoes mixture into the pie shell and pour the egg mixture over that. Bake for 35-40 minutes or until knife inserted comes out clean. Cool slightly before serving.
