2-3 lbs cooked shrimp, peeled and deveined
1 cup cooked rice
1 cup grated sharp cheddar cheese
1 can cream of mushroom soup
1/2 cup chopped celery, green or red bell pepper and green onion tops and bottoms
1/2 cup butter
8 lemon slices

Preheat oven to 375. Combine first 4 ingredients. Saute chopped vegetables in butter and add to shrimp mixture. Put in a casserole and completely cover top with sliced lemons. Cook, covered, about 20-30 minutes.

NOTE: May be prepared ahead and frozen.
