SWEET AND TANGY GARLIC CHICKEN

6 boneless, skinless chicken breasts
1 tbsp olive oil
1/2 tsp pepper
1 1/2 tbsp tomato paste
3 clove garlic, minced
1 cup chicken broth
1/4 cup balsamic vinegar
4 tbsp scallions
1 tbsp honey

Heat oil in a skillet and brown chicken on all sides, about 10 minutes. Remove from pan and drain off any excess fat. Add remaining ingredients and bring to a boil. Return chicken to pan and reduce heat. Simmer for 30 minuts. Serves 6
