Pastry for single-crust pie (9 inches)
12 ounces fresh chanterelle, baby portobello or oyster mushrooms, or a combination
3 tablespoons butter, divided
1 medium leek (white portion only), halved and sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup (4 ounces) shredded cheddar cheese
4 eggs
3 tablespoons heavy whipping cream
Minced fresh parsley, optional

(1) Preheat oven to 375deg;. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling.
