SWEET POTATO BUNDT CAKE

1/2 cup sugar
1/2 cup butter
3 large egg whites
1 large egg
2 (15 oz) cans sweet potatoes, drained and mashed
2 cups flour
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking soda and baking powder
1 1/2 tsp vanilla extract
2 tbsp flaked coconut

Preheat oven to 350. In a large bowl, beat sugar and butter until blended. Add whites and eggs, one at a time, beating after each addition. Mix in sweet potatoes.

In another bowl, combine dry ingredients and gradually add to first mixture, beating well after each addition. Add vanilla extract. Pour half of batter into a Bundt pan coated with cooking spray and dusted with flour. Sprinkle coconut over batter. Cover with remaining batter. Bake for 50 minutes or 1 hours or until toothpick inserted into center comes out clean. Cool in pan on wire rack for 10 minutes; invert to serving plate.
