Cheesy Pull Apart Italian Sub Bites

20 Rhode’s Rolls, frozen
1 lb. ground hamburger meat
½ yellow onion, diced
1 green bell pepper, diced
12 ounces mushrooms, sliced
14.5 ounce can diced tomatoes, drained
12 ounces smoked provolone cheese, sliced deli-style
1 tablespoon Italian seasoning
(1) Spray a 9x13 pan with cooking oil.
(2) Place the frozen Rhode’s rolls in pan, 5 across and 4 deep.
(3) Take the smoked provolone slices and cut then into quarters (1/4), and lay then in between the rolls, only use ½ of the cheese, so about 6 ounces. Cover with a kitchen towel and set aside.
(4) Next, in a large sauté pan, cook hamburger over medium-high heat until fully cooked, crumbling it while you are cooking it. Drain meat once it is completely cooked and set aside.
(5) Using the same pan, add 1 tablespoon olive oil and place over medium-high heat. Add in diced onion, diced green peppers, and sliced mushrooms, cook until onion is translucent, about 5 minutes. Reduce heat to low, add in diced tomatoes and hamburger, stir together and season with salt and pepper, about 2 teaspoons of pepper. If it were up to my husband it would be twice that, but he can add that to his at dinner. Remove from heat and let it completely cool, I actually poor the meat and veggies onto a large baking sheet to let them cool down quicker.
(6) Once the vegetables have completely cooled, pour the meat and vegetable mixture over and in between the rolls with the cheese. Top with the 1 tablespoon of Italian seasoning, sprinkling it evenly over the rolls. Place back kitchen towel and let the rolls continue to rise, 3-5 hours.
(7) Once the rolls have risen, pre-heat oven to 350 degrees.
(8) Place rolls in oven and bake 12 minutes, then open oven and gently pull out pan, top each roll with 1-2 quarters of cheese, then gently push back into the oven, close oven and bake for about 23-25 minutes, or until rolls are completely risen and cheese is a golden and bubbly.
(9) Remove from oven and serve with a side of marinara sauce for dipping if you wish, our family eats them with no sauce.
