GRILLED STUFFED PORK TENDERLOINS

Stuffing
2 tbsp butter
1/2 stalk celery, diced
1/2 onion, chopped
1/2 tsp rosemary and basil
6 mushrooms, chopped
2 tbsp Madeira wine
1/2 cup breadcrumbs
Salt and pepper, to taste
2 medium pork tenderloins, fat removed
1 tbsp olive oil
1 tsp teriyaki sauce
Juice of 1 lemon
Pepper
Stuffing: Cook celery and onion in butter over low heat about 5 minutes. Add seasonings and cook 2 minutes. Add mushrooms; continue cooking 4 minutes. Add wine and cook 2 minutes. Mix breadcrumbs and cook 1 minute. Remove from heat and transfer mixture to a food processor; blend 30 seconds.
Cut each tenderloin lengthwise but not all the way through and cut in a V to butterfly and lay tenderloin flat. Pound between waxed to flatten. Spread stuffing over tenderloins, roll and secure with string.
Mix remaining ingredients and brush mixture over pork.
Preheat grill to medium heat source. Oil grill and add stuffed tenderloins. Cover and cook 30 minutes. Season with salt and pepper and turn tenderloins over 2-3 times during cooking. Baste with oil mixture 5-6 times during cooking process.
