BEEF AND CABBAGE

2 lbs ground beef
2 onion, chopped
3 clove garlic, minced
2 (16 oz) cans tomato sauce
1/2 cup applesauce
5 tbsp apple cider vinegar
4 tbsp dark brown sugar
1 tsp dried thyme
Salt and pepper, to taste
8 cups finely shredded cabbage, about 1 1/2 to 2 lbs

Brown meat in a Dutch oven. Add onion and garlic and continue to cook until onion is softened. Drain. Add remaining ingredients except cabbage and cook to a boil, stirring constantly. Add cabbage; reduce heat and cover. Simmer for 25 minutes, stirring occasionally, until cabbage is tender. Cook with lid off for a few minutes to thicken the sauce.
