ALMOND & CRANBERRY CHICKEN SALAD SANDWICHES

4 cups cubed cooked, lemon-herb rotisserie chicken (about 1 1/4 lb)
3/4 cup diced celery
1/2 cup light mayonnaise
1/2 cup Fisher Culinary Touch Almond Cranberry Blend, divided
1/4 tsp ground black pepper
8 slices whole wheat bread
8 Bibb lettuce leaves

In large bowl, combine chicken, celery, mayonnaise, 1/4 cup Almond Cranberry Blend, and black pepper; set aside.

Lightly toast bread slices. Top 4 bread slices with 2 lettuce leaves and 1 1/4 cup chicken mixture. Sprinkle 1 tbsp Almond Cranberry Blend over each; top each with 1 bread slice. Serve immediately. Makes 4 sandwiches
