APPLE CIDER POUND CAKE

6 large eggs
1 cup butter
1/2 tsp salt
1/2 cup shortening
3 cups sugar
1/2 tsp nutmeg, allspice and baking powder
1 cup apple cider
1/4 tsp cloves and cinnamon
1 tsp vanilla extract

Caramel Glaze
1/2 cup sugar
1/4 cup buttermilk
1/4 tsp baking soda
1/2 tbsp corn syrup
1/4 cup butter
1/4 tsp vanilla extract

Beat butter and shortening and gradually add sugar, beating for 1 minute. Add eggs, one at a time, beating well after each addition. Sift together dry ingredients and add alternately with cider and vanilla extract to creamed mixture. Blend well and bake in a 10 inch tube pan at 325 for 1 1/2 hours or until toothpick inserted into center comes out clean.

Glaze: Combine ingredients in a saucepan. Bring to a boil; reduce heat and simmer 10 minutes. While cake is warm, drizzle 1/2 of the icing over cake. Serve remaining icing over individual cake servings, if desired.
