APPLE CAKE SURPRISE

Cake
1 cup butter or shortening
1 1/4 cups sugar
4 eggs
1 tsp vanilla extract
1/2 tsp almond extract
3 cups flour
1 1/2 tsp baking power
1 can apple pie filling

Glaze
1 cup confectioners sugar, sifted
1-2 tbsp milk or water

Preheat oven to 350. Grease a 13x9 inch baking pan.

Cake: Cream butter and sugar until blended. Add eggs, one at a time, beating after each addition, beating until smooth. Add extracts and beat on high speed for 3 minutes, or until thick and light.

Combine dry ingredients and add to creamed mixture on low speed until smooth. Spread 1/3 of batter into pan. Spread pie filling evenly over batter. Drop remaining batter by tablespoonfuls onto pie filling. Bake for 30-35 minutes or until golden. Cool slightly.

Glaze: Combine ingredients until smooth, using just enough liquid to make a glaze consistency. Drizzle over cake.

VARIATION: Also good with cherry or strawberry-rhubarb pie filling instead of apple.
