SWEET SAUERBRAUTEN - Crock pot

3 lb rump or chuck roast
3 potatoes, peeled and cubed
3 carrots, peeled and sliced
3 onions, sliced
1 (10 1/2 oz) can consomme
1 cup dry red wine
1/2 cup red wine vinegar
1 dill pickle, chopped
1/4 cup water
1/4 cup flour
6 ginger snaps, crumbled
Salt and pepper, to taste

Place roast in crock pot. Arrange vegetables around meat. Add next 4 ingredients. Cover and cook on HIGH for 6 to 8 hours. Remove meat and vegetables from crock pot. Allow meat to rest and then slice. Keep meat and vegetables warm.

In saucepan, blend flour and water, stir in juices from roast along with ginger snaps and cook and stir over medium heat until sauce comes to a boil and thickens. Season with salt and pepper. Spoon sauce over meat.
