CRAB AU GRATIN

1 stalk celery, chopped fine
1 small onion, chopped fine
2 cups milk
1 tsp salt
1/4 tsp black pepper
1 lb white or lump crabmeat
1/4 cup butter
1/2 small red or green bell pepper, chopped fine
1/4 cup flour
2 egg yolks, beaten
1/2 tsp red pepper
1/4 cup cheddar cheese, grated

Saute vegetables in butter until well done, but not brown. Blend flour well into mixture. Pour in milk gradually and stir constantly until it starts to thicken. Add egg yolk and seasonings and cook 5 minutes, continuing to stir. Fold crabmeat into sauce, blend well and transfer into a lightly greased casserole dish. Sprinkle top with cheese and bake at 375 for 15-20 minutes or until light brown.
