CRAB AND VEGETABLE CASSEROLE

1/4 cup olive oil
1/2 large onion, sliced thin
2 stalks celery, sliced
3 medium zucchini, slices thin
3 tbsp chopped garlic
1/2 lb cleaned spinach
1 (10 oz) can whole peeled tomatoes, crushed lightly
3 lb crab meat
1/2 cup dry white wine
Pinch chopped parsley, thyme, basil and pepper
2 oz grated Parmesan cheese
Cooked rice
Saute chopped vegetables in olive oil until tender. Add next 3 ingredients and heat through. Add remaining ingredients except rice. Finish in hot oven until heated through. Serve with rice. Serves 12.
