FESTIVE CHEESE SPREAD

1 (7 oz) gouda cheese round in red wax covering, room temperature
1 (2 1/2 oz) pkg smoked sliced beef, finely chopped
1/4 cup sour cream
2 tbsp sweet pickle relish
2 tsp prepared horseradish

Carefully slice through wax and cheese to within 1 inch of the bottom, forming 8 pie-shaped wedges. Carefully fold wax back to expose cheese; remove cheese.

In a mixing bowl, beat the cheese until creamy. Add the remaining ingredients and spread in wax shell. Chill and serve with crackers.
