CARAMEL APPLE STREUSEL COOKIES

Cookie Dough
1/2 cup butter
2/3 cup packed brown and sugar
1 (4 oz) pkg instant spiced apple drink mix
2 eggs
1 2/3 cup flour (if dough is too soft, add another 1/4 cup flour)
1 cup rolled oats
1/2 tsp baking soda
1 cup dried apple, chopped
2/3 cup walnuts, chopped

Streusel Topping
1 cup flour
1 cup packed brown sugar
1/4 cup butter

Caramel Frosting
2 tbsp caramel ice cream topping
1 cup confectioners sugar

Preheat oven to 350. In mixing bow, combine first 4 ingredients; beat until fluffy. Add eggs and beat well. Add dry ingredients, stir in apples and walnuts. Combine streusel topping ingredients and blend into fine crumbs. Drop the cookie dough be tspfuls into the topping and roll to cover the cookie.

Place dough on greased cookie sheet and bake for 9-11 minutes. Cool one minute and remove to wire rack. Combine frosting ingredients and drizzle over cookies. Makes 3 dozen.
