BUTTERSCOTCH FUDGE

1/4 cup butter
1 cup sugar and packed brown sugar
3/4 cup sour cream
1 tsp vanilla extract
1/2 cup chopped pecans or walnuts
Pecan or walnut halves

Melt butter in a saucepan. Add brown sugar and heat to boiling. Add sugar and sour cream, cook over medium heat until sugar dissolves. Raise heat slightly, cook until mixture reaches 236 degrees on a candy thermometer. Remove from heat, do not stir. Allow to cool at room temperature to lukewarm (pan bottom barely warm to touch.) Beat until mixture holds its shape and loses its gloss. Quickly add vanilla and nuts. Working fast, spread candy in butter dish. Cool and cut into squares. Garnish with nuts.
