Shelly's Recipe

1 1/2 cup creamy peanut butter
1/2 cup butter, softened
1 tsp vanilla extract
1/2 cup ground graham cracker crumbs
1 cup confectioners sugar
2 cups semi-sweet chocolate chips
2 tbsp shortening

n medium bowl, mix peanut butter, butter, vanilla extract, graham cracker crumbs and sugar with hands to form a smooth dough. Mixture will be very stiff. Shape dough into balls using two tbsp for each. Place on wax paper and put in refrigerator.

Melt chips and shortening together in top of a double boiler until very liquid. Using a fork or skewer, dip each ball into chocolate leaving just very top of ball exposed. Set on a greased cookie sheet, setting each ball on the peanut butter end. Refrigerate until chocolate is firm. Makes 3 dozen.
