HAM-STUFFED MUSHROOMS

12 large mushrooms or 24 bite-size mushrooms
2 tbsp butter
Chopped mushroom stems
3/4 cup chopped onion
1 cup ground or finely minced country ham
1 cup dry bread crumbs
1 slightly beaten egg

Preheat oven to 325. Remove and chop mushroom stems and wipe mushrooms with a dry cloth. Melt the butter. Saute mushroom stems and onion in butter. Combine ham, bread crumbs and egg with mushroom mixture. Stuff caps; add a sliver of pimento for color. Bake 15 minutes, or broil until done, if you prefer.
