PESTO CHICKEN

1/3 cup shredded mozzarella cheese
1/4 cup basil pesto sauce
1/4 cup Dijon mustard
4 boneless skinless chicken breast halves

Preheat oven to 350. Mix 1/4 cup of the mozzarella cheese, pesto sauce and mustard until well blended; set aside. Place chicken in 13x9 inch baking dish. Spread mustard mixture evenly over chicken; top with remaining cheese. Bake 20 to 25 minutes or until chicken is cooked through.

Note: This is really good as a sandwich on chibatta bread or on top of angel hair pasta with vegetables sauteed in a butter garlic sauce.
