BEEF POT ROAST A LA PROVINCE

3 lb pot roast
1/4 cup butter
3 carrots and stalks celery, chopped
1 medium onion, chopped
1 clove garlic, minced
1 lb sliced mushrooms

Sauce
1 cup condensed beef consomme
1 cup sour cream
1/3 cup red wine vinegar
1 tsp salt
2 tbsp water and brown sugar
1 tbsp capers
1/2 tsp paprika

Brown meat in butter. Add remaining ingredients except mushrooms and cook until golden brown, stirring constantly. Add mushrooms. Blend together sauce ingredients and add to beef mixture. Cover and simmer 2-3 hours, until meat is tender. Gravy may be thickened with flour.
