CHEESE TOPPED FISH FILLETS

2 lbs orange roughy
1 tbsp vegetable oil
1/4 cup sliced mushrooms
2 tbsp minced green onions
3 tbsp butter, melted
1 medium tomato, peeled, seeded and chopped
1 cup shredded cheddar cheese
1 egg, beaten
3/4 tsp salt
1/2 tsp dried whole basil
1/4 tsp lemon pepper seasoning
Preheat oven to 500. Lightly grease a 13x9 inch baking pan and add fish. Drizzle with oil. Bake for 8-10 minutes; set aside. Meanwhile, saute mushrooms and onions in butter in a skillet until tender. Stir in tomato and remaining ingredients; cook 1 minute. Spoon mixture over fillets; broil 6 inches from heat for 3 minutes or until cheese melts.
