MUSHROOM CHICKEN

Category: Chicken

4 boneless, skinless chicken breasts, rinsed and patted dry
1/3 cup flour, seasoned with salt and white pepper
2 tbsp oil
4 cups fresh sliced mushrooms
1/2 cup Dijon mustard
bottle of dry white wine.

Heat oil in a skillet. Coat the chicken in seasoned flour and brown over medium high heat; set aside. Cook the mushrooms 2-3 minutes or until they were tender in the same skillet. Add the mustard and 1/2 cup wine to the mushrooms and return chicken. Heat until the sauce boiled, then cover and let simmer over medium low heat for 20-25 minutes.
