FLOUNDER TOPPED WITH CREAMY SEAFOOD SAUCE

2 tbsp butter
2 tbsp flour
1 cup half-and-half
1/4 tsp salt
Old Bay Seafood seasoning
1/2 tsp shredded sharp cheddar cheese
1/2 cup sour cream
4 founder fillets
1 cup crabmeat
1 cup uncooked scallops, rinsed
1 1/2 cups cooked rice or noodles
1/4 cup pecan pieces, toasted

Melt butter in a saucepan; blend in flour and add cream. Stir constantly until thickened. Add seasonings and cheese; stir until cheese melts. Set aside. When cool, add sour cream.

Place fillets on bottom of a greased casserole dish. Add seafood to cream sauce and pour over fish. Bake at 325 until fish is done, about 10-15 minutes. Serve over cooked rice or noodles and sprinkle with toasted pecans.
