2 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1 1/3 cup sugar
1/4 cup oil
1/2 cup sour cream
3 eggs, beaten
2 cups grated carrots
1 (8 oz) can crushed pineapple

Topping:
2 tbsp cinnamon
1/8 tsp nutmeg
1/8 tsp all spice
1/8 tsp cloves

Preheat oven to 425. Sift flour, baking soda and baking powder. In separate bowl combine sugar, oil, sour cream and eggs. Add carrots and pineapple quickly. Add pineapple mixture to flour mixture. Fold with spatula until moistened. Spoon in 12 greased muffin tins. Mix topping ingredients together and sprinkle on top. Bake for 15 to 20 minutes. Cool in pan 8 to 10 minutes.
