BAKED SPINACH WITH CHEESE

1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1 onion, diced
1 cup chopped mushrooms
2 clove garlic, minced
1/2 tsp salt
1 tsp paprika
1/4 tsp pepper
1/2 lb butter
1/2 lb Swiss or Emmenthaler cheese, grated
1/8 tsp nutmeg

Preheat oven to 350. Saute onion, mushrooms and garlic in butter for 2-3 minutes. Add spinach and salt. Grease a casserole dish. Sprinkle half the cheese over the bottom of the casserole. Add the spinach mixture and sprinkle with seasonings. Top with remaining cheese and bake for 20 minutes or until cheese bubbles.
