CHICKEN IN BASIL CREAM SAUCE OVER PENNE PASTA

1 quart chicken stock
4 tbsp chopped fresh basil
1/2 tsp white pepper
2 cups whipping cream
1 cup melted butter
1 cup flour
2 tbsp vegetable oil
24 oz boneless, skinless chicken breasts, diced
1 cup finely sliced green or red bell pepper 1 lb sliced fresh mushrooms
1 red bell pepper, seeded, cored, julienne cut
2 lb cook penne pasta

Sauce: Combine first 4 ingredients in a saucepan. Bring to a boil.

In another saucepan combine butter and flour, whisking until smooth. Add to stock mixture and stir to combine.

Chicken: Saute chicken and vegetables, 6 to 8 minutes or until chicken is cooked through. Add pasta and sauce; toss to combine and serve. Serves 6
