AUTUMN CARROTS

3 tbsp oil
1 sweet onions, sliced very thin
2 lbs baby carrots
1 1/2 cups apple cider
1/4 cup packed brown sugar
1/4 tsp ground red pepper
2 tbsp chives, chopped

In a skillet, saute onion in onion, about 3 minutes. Add next 4 ingredients; bring to a boil. Cook mixture 10 minutes over medium heat or until carrots are tender. Transfer to a serving bowl and garnish with chives.
