ITALIAN CHEESE STUFFED CHICKEN

1 lb boneless, skinless chicken breasts
2 cups Italian shredded cheese
2 eggs
2 tbsp milk
Italian bread crumbs
Vegetable oil

Flatten chicken between waxed paper and trim excess fat. With a knife, cut sideways into chicken to create a pocket. Stuff pocket with cheese.

Make a breading station: In one bowl, beat eggs and milk. Place bread crumbs in another. Holding pocket closed, dip chicken in egg mixture and roll in bread crumbs, coating completely. Heat 1/2 inch oil in a frying pan and brown chicken on both sides. Remove to a baking dish and bake at 425 for 15 minutes. Serve with desired pasta and sauce.
