ITALIAN STUFFED CHICKEN

1 cup herb seasoned stuffing mix
1/4 cup dry white wine or water
4 oz salami, chopped
1/2 cup shredded mozzarella cheese
1/4 cup chopped onion
1/8 tsp dried basil, crushed
3 medium boneless, skinless chicken breasts
2 tbsp butter
Hot cooked sliced yellow or zucchini squash

Toss together stuffing mix and wine; stir in next 5 ingredients. Flatten chicken breasts to about 1/4 in thickness. Spoon about 1/3 cup stuffing mixture in center of each breast. Fold in sides of chicken; roll up meat. Tie them with string in bundles. Brown all sides of chicken breasts in butter and transfer to a baking dish. Bake, uncovered, at 350 for 30 minutes. Serve with hot cooked squash. Serves 6
